Assorted Bruschetta

Ingredients
1 lf Baguette, sliced
1/4 cup(s) Extra Virgin Olive Oil
Directions
- Brush baguette slices with olive oil and place on a baking sheet. Heat broiler to high and cook until golden for 2 to 3 minutes. Top with desired bruschetta toppings.
- For Caprese: Combine seeded and chopped Roma tomatoes with diced FRESH mozzarella, strips of fresh basil, extra virgin olive oil, salt and pepper. Place a piece of rolled prosciutto on the baguette slice and then top with the Caprese mixture.
- For Antipasti: Combine assorted chopped olives with diced provolone, and black pepper. Layer two folded pieces of Italian salami on each baguette slice. Top with the olive mixture.
- For Pear & Blue Cheese: Place a slice of rolled Speck Alto Adige on top of each baguette slice. Top with two slices of pear. Add blue cheese crumbles and walnut pieces. Drizzle with honey.
